French Toast Casserole

Waking up on the wrong side of the bed? Having a bad day? Well, we’ve got just the thing to make it better. National French Toast Day is December 28th and we can’t think of a better way to celebrate than by enjoying a heaping pile of our favorite breakfast food, french toast.If you want to celebrate French toast any time of year, you can use my recipe. It’s easy to make, even for someone who isn’t a big cook.

Here we go! Let’s get into to it!

Prep: 10 minutes

Bake: 40-45 minutes

Cool: 10 minutes

Ingredients

  • 1/2 cup of half and half

  • 2 Cans Pillsbury Grand Cinnamon Rolls with icing2 TSP of vanilla

  • 6 Eggs

  • 1 TSP of Cinnamon

  • 1 pinch of salt

  • 3 TBSP of sugar

  • Crushed Pecans'

  • Fresh Fruit for toppings

  • Optional: Frozen Fruit Medley

Steps:

  • Preheat oven to 375 degrees F. Grease a 13” by 9” baking dish. Set aside.

  • Optional: You can layer a frozen fruit medley on the bottom of the baking dish. We used fruits but it is equally as amazing without.

  • Open the Pillsbury Cinnamon rolls and cut rolls into four to six pieces. Set aside the icing. If you added the fruit, lay roll pieces on top of the fruit.

  • Add the eggs to a medium bowl and beat them. After add the half and half, cinnamon, vanilla, sugar, and salt to a the eggs mixture. now mix all together until is completely mixed together.

  • Pour mixture over the top of baking dish. Add crush pecans to the top.

  • Bake 40-45 minutes or until a toothpick comes out clean.

  • Cool in pan for ten minutes. Place icing in microwave for no more than 10 seconds. Drizzle over the top of casserole. Add fresh fruit to the top of casserole. We used sliced strawberries, raspberries, blueberries, and blackberries. Serve warm. If desired, drizzle with maple syrup.

Definitely a delicious recipe and will be a staple for the holidays in our home.
